What’s cookin’ Tuesday

I like to cook. (I hate to clean up.) I’m big on good, easy food that has mostly fresh ingredients.

I like to talk food, so I thought I’d do it here.

Favorite thing I’ve made in the past week:

Salmon salad with rice

I cooked a couple of pieces of salmon in honey mustard dressing (yes, bottled dressing! oh my!) tossed it in with some mixed greens, celery and carrot, and added a cup of Minute Brown & Wild Rice. Drizzled on a little extra dressing to keep it moist and a meal was served.

I’m guessing Long Suffering’s favorite meal was lamb chops (just salt and pepper, no need to douse the meat in a sauce) mixed frozen veggies, and mashed potatoes. We love nutmeg in our mashed potatoes!

What’s next on the menu?

We’re having meatloaf for lunch (not one of my faves). Usually I use ground turkey, but today I’m going to give ground chicken a try. My trick for making it palatable? BBQ sauce instead of catsup.

I’m looking forward to the Morrocan-inspired stew I made yesterday in the crockpot. Chick peas, carrots, butternut squash, a can of tomatoes, onion, garlic, tumeric, cinnamon, ginger and cumin. It smelled heavenly. I’ll spoon some over some couscous and serve it with a dollop of plain yogurt.

  1. I made salmon for the first time at home Sunday and it turned out great. I just seasoned the filet with a little Old Bay and some black pepper [not sure if the pepper was overkill but it tasted good] and baked it. I would have done a twice baked potato and fresh green beans with it, but I was outvoted and had to make tater-tots and mixed veggies. Can’t win ’em all, at least I got them to eat fish.
