What’s cookin’ Tuesday 2/2/10

Soup. Lots of soup.

I just finished a pot of black bean soup. (I add kidney beans to mine for a little change in texture). Pretty soon we’ll finish up a pot of vegetable soup (mostly root vegetables — parsnips, turnips, carrots, potato — a good winter soup).

Today’s lunch is fake chicken parm — made the sauce last night (I always make homemade sauce — soooo much better) — it’s got whole grain pasta, part skim ricotta, and fake chicken patties (Morningstar).

Tonight’s salad will be topped with asparagus and red pepper which I roasted last night.

What are you eating?

Any suggestions as to what kind of soup I should make next?

  1. I have not cooked in days. I feel guilty about it – just a little bit. I think tonight will be salmon to make up for the badness I’ve been eating lately.

  2. I dunno…less cooking means less clean-up…nothing to feel guilty about.
