What’s cookin Tuesday 2-16-10

First I have a confession to make — The vegetable soup I made last week turned…PURPLE!

Yes, purple. Apparently using purple cabbage in soup is not the best of ideas. It tasted fine, but it turned the broth and turnips a lovely shade of purple. Whooops!

(all this because I was intentionally cutting down on the mustard greens since someone here isn’t a fan of mustard greens)

Not everything I made last week was a disaster though. I made a four ingredient salmon dish that Long Suffering declared was “as good as we’d get in a fancy restaurant”. But I’ve got to confess that this was a fluke since I only made it because I happened to have butter left over from the brunch the week before.

I also made skinless turkey cutlets in two new ways. I made a mixture of breadcrumbs and finely chopped roasted almonds. I rolled the turkey in them (no egg or anything and baked). They were okay, probably would have been much better if I hadn’t forgotten to spice the mixture (Another whoops!). I also coated the cutlets in a grainy mustard and then dipped them in the breadcrumb and almond mixture. They were much better.
