What’s cookin’ Tuesday 7/6/10

It’s too damn hot. It’s a good time for salads.

(For the record, the quinoa/chickpea salad I made last week was actually pretty darn good.)

My salad of the week though was this one:

Mixed greens topped with watermelon and feta! Yum! The watermelon makes it sweet, the feta makes it salty. The watermelon gives it crunch, the cheese makes it creamy. Then top it off with a light olive oil and lime juice dressing, sprinkle liberally with fresh mint (I lurve fresh mint!) and you’ve got heaven in a bowl. (although next time I’ll probably add some roasted almonds to give it a little more crunch)

If you accompany it with a slice of homemade whole wheat bread and a generous swipe of hummus you’ve got the perfect summer meal. 🙂

  1. OMG, this salad sounds awesome! I love watermelon and I love feta and when mixed together no one in my house will probably eat it but me so I wouldn’t have to share!

  3. I’m on a mango kick! I like slicing them in half and just eating them out of the skin with a spoon. Yum.
